We select the best flours from family-run Italian mills that have been grinding soft wheat of the zero zero type for years and we mix them to obtain a fragrant and genuine dough that is leavened for 48 hours and hydrated at 80%. Our pizza is good eaten fresh from the oven, reheated at home or in the office.
