Our pizza is made according to the principle of Lievito Naturale, which is also affectionately known as Lievito Madre, or Italian mother yeast. The time-consuming production of the yeast dough makes our pizza particularly crispy, airy and easy to digest. State-of-the-art technology, an innovative process and a lot of know-how and passion make the dough perfect. Organic and regional ingredients make our pizza al metro an experience! We brought the idea for our special pizza gourmet to life together with Alvise Ballarin from Cavallino, Venezia. Alvise runs the Trattoria Laguna there, the birthplace of our Lievito Naturale.
